Rosemary Lemon Roasted Chicken

This Rosemary Lemon Chicken is one of my all time favorite recipes!! It's so simple and classic, perfect for a Sunday night family dinner.  I have also tried this recipe in the crock pot. I prefer it roasted because all the savory juices make the flavor amazing (it tastes dryer in a crock pot to me) but if you need a quick option you can always try it!



You can also customize it to you and what you have at home. If you prefer different veggies, you can use pretty much anything. 

Here's what you Need: 
1 whole chicken
3-5 sweet potatoes
4-5 large carrots (peeled)
1 onion
Olive oil 
Salt + pepper
Fresh or 1-2 Tbsp dried rosemary
1 Lemon
1 bulb of garlic

Directions:
Dice onion, potatoes and carrots and place in a large baking dish or roasting pan.  Sprinkle veggies with salt and pepper and drizzle with olive oil. 

Remove the chicken giblets. Rinse chicken cavity.  Sprinkle rosemary, salt and pepper inside chicken cavity. Slice Lemon in half and place inside cavity. Break bulb of galic apart and place inside cavity. Close the legs of the chicken and tie together.  Sprinkle salt and pepper on the skin of chicken. Drizzle skin with olive oil and spread evenly. 

Place the chicken on top of your veggies in the baking dish. 

Bake it at 425 degrees for 1 1/2 hours or until the juices run clear. 

Relax while your house starts to smell amazing! 

You can serve it with just the veggies or over brown rice.
